9 Reader Favorite Recipes of 2016

December 26, 2016

I can’t believe it’s the last week of 2016. And my, oh my, what a year it’s been! Another year of the Meatless Monday linkup, and another year of finding new recipes from other bloggers! Today I’m taking a look back on what were some of your favorite recipes of mine from 2016. Check it out:

9 Reader Favorite Recipes of 2016 | Meatless Monday | Running on Happy

9 Reader Favorite Recipes of 2016

1. Strawberry Raspberry Dessert Smoothie

My Strawberry Raspberry Dessert Smoothie from February, featuring Nektar Naturals, continues to be a huge crowd favorite. And for good reason, too — it’s dessert disguised as a smoothie! Got sweet tooth? Try smoothie. 😉

2. Roasted Veggie Gnocchi

I tried the Roasted Veggie Gnocchi from one of my favorite cookbooks, adapted it to fit my family and posted it on my blog. It’s not an original recipe but you guys love it just the same.

3. Berry Banana Protein Smoothie

Smoothies are one of my go-to beverages, especially after a tough workout but sometimes even as a meal replacement if I’m having a particularly busy day. My Berry Banana Protein Smoothie seems to be right up your alley, too.

4. Blueberry Avocado Smoothie

We all love smoothies as is evidenced by the popularity of my smoothies — particularly the Blueberry Avocado Smoothie. Hey, analytics don’t lie.

5. French Onion Soup

There’s something amazing about making your own soup, but something incredible about making homemade French Onion Soup. This soup is a meal in itself, and you seem to agree. Looking for the perfect cold weather comfort food? Look no further.

6. Protein Boosted Cinnamon Banana Bread

My Protein Boosted Cinnamon Banana Bread is the gift that keeps on giving. It’s healthy, it’s delicious, it can be breakfast, snack, or dessert. With a hint of cinnamon and filling and nutritious protein, it’s a hearty banana bread — and it’s definitely a reader favorite.

7. Quinoa Veggie Burgers and Baked Sweet Potato Fries

When it’s time to fire up those grills and enjoy the summer sunshine, don’t forget one of your favorite recipe combos — Quinoa Veggie Burgers and Baked Sweet Potato Fries. This meal is the real deal and it’s amazing! Bookmark this page to come back to come June. 😉

8. Pizza Bagels

Easy, kid-friendly, delicious dinner. And you think it’s great, too! Pizza on bagels? Pizza bagels!

9. Berry Cherry Anti-Inflammatory Smoothie

Coming off the holidays means time to detox from all the sugar and fat we consumed over the last month or so. What better way to lower the inflammation in our bodies than with the Berry Cherry Anti-Inflammatory Smoothie? It was definitely one of your favorite recipes this year, and mine too.

My brain combined the blueberry avocado smoothie with the french onion soup. I was a little worried. And French onion soup is next on my crockpot list!

I’m glad the whole tumeric fad happened because it’s SO GOOD for you! I never would have known about this without the blogging world =P My favorite recipe is probably my butternut squash cheese sauce adapted from Oh She Glows. I get rave reviews 🙂
