Meatless Monday: Cranberry Oat Muffins

Happy Meatless Monday, friends! Since I’ve had a busy weekend and am now just getting back into the swing of things, one of my favorite friends graciously offered to guest post for me today. You all know Noemi from all our running adventures.

She’s also quite the chef and baker. I love when she tries new recipes because when she does, she often shares them with me. Today she’s back with what can only be described as heaven-in-a-muffin. I haven’t tried them but the pictures look delicious and the ingredients are quite healthy!

Without further ado, here’s Noemi’s recipe for Cranberry Oat Muffins!


Meatless Monday: Cranberry Oat Muffins

Cranberry Oat Muffins

Ingredients

  • 1 C rolled oats
  • 1/2 C plain Greek yogurt
  • 1/4 C all purpose flour
  • 3/4 C whole wheat flour
  • 1/2 C oat bran
  • 1/4 C Chia seeds
  • 1 Tbsp flax seeds
  • 1/2 C brown sugar
  • 1 Tbsp baking powder
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • sprinkle of powdered ginger
  • 1/2 C applesauce (natural)
  • 1 Tbsp olive oil
  • 1 C milk
  • 1 egg
  • 1 C frozen cranberries
  • 1 C frozen berries (can be blueberries or mixed fruit)

Directions

Preheat oven to 425°F and grease about 16 muffin cups. I use one 12 count muffin pan and one 6 count muffin pan, but the 6 count pan never gets filled all the way.

Mix first the yogurt (I use full-fat greek yogurt) and oatmeal in a large bowl. Then, add all dry ingredients and combine ingredients well. Stir together milk, egg, applesauce, and oil. Combine liquid ingredients with dry mixture. Add cranberries and other berries.

I usually add in some other mix-ins, too, like one grated carrot or a handful of chopped roasted nuts. I also like to sneak in some extra sweetness and sprinkle extra brown sugar on top of the muffins before they go into the oven. This gives a little extra crunch, too!

Pour batter into greased muffin cups. I use an ice cream scoop for this to minimize mess and to make for an even distribution of batter. Bake 15 to 20 minutes.
