As I mentioned last week in my first Meatless Monday post of the year, I’m making a very concerted effort to eat healthier and live more intentionally in 2017. I’m generally a fairly conscientious eater, but my one vice happens to be sugar. Interestingly enough, I came across this article over the weekend and thought it was pertinent to what I’m doing in regard to sugar — and why I’m doing it. Give it a read. It’s lengthy but definitely worth it.
Moving along to today’s recipe, I really wanted to try something light, yet filling and satiating. As I was making a supplemental dinner for my daughter over the weekend, consisting of eggs and avocados, I had an a-ha moment. A little lightbulb went off in my head and I started gathering food items. My husband looked and me and said, “you’re creating, aren’t you?” He knows me so well. 😉
In my quest for something light and satiating, I brought together three simple ingredients: cherry tomatoes, clementines, and avocados. Topped with a little sprinkling of citrus dressing and it’s perfection in a bowl.
Everything in this salad is really great at boosting the immune system. Cherry tomatoes boast vitamins E, B6, A, C, and K to name a few. Clementines are known for their vitamin C and calcium, plus potassium, too. And avocados, as we know, are an incredible source of good fats in our diets but did you know they contribute nearly 20 vitamins, minerals, and plant compounds to our diets as well? Amazing.
This salad is so good that my son dubbed it the So Good Citrus Salad. And the name stuck.

‘So Good’ Citrus Salad
serves 4
Ingredients
- 2 avocados, pitted, sliced, and cut into 1/2″ pieces
- 15-20 cherry tomatoes
- 4 clementines, peeled and segmented
- 4 Tbsp mandarin ginger dressing (I use Brianna’s)
Directions
Place all veggies in a bowl, arranging such that all the veggies are visible. Carefully drizzle dressing, coating all the vegetables lightly. Serve and enjoy!
