Cold Spiralized Zucchini Salad

I did it. I finally used my spiralizer. And it did NOT disappoint. I honestly can’t believe I’ve been living my life without one for so long. Though I’m late to the game, the spiralizer is life-changing and I’ll be sure to use it time and again because it was so easy and so fantastic.

What did I create with my newfound love of the spiralizer, you may ask? I made a delicious, simple, nutritious, cold zucchini salad. It was truly amazing and I can’t wait to make it again.

Cold Spiralized Zucchini Salad

Ingredients
  • 1 zucchini, spiralized
  • 1/2 Tbsp sunflower oil
  • 1 Tbsp lime juice
  • 1 clove garlic, minced
  • salt and pepper to taste
Directions

Spiralize the zucchini in a large bowl, cutting the spirals as necessary and desired.

Add sunflower oil, lime juice, and garlic and toss gently to combine. Lightly sprinkle with salt and pepper to taste. Serve cold as a side salad, or add marinated tofu and serve as a main dish.

The best part of the spiralizer is that it somehow convinced my son that zucchini is indeed NOT the devil. I couldn’t believe it. He willingly ate zucchini! Hallelujah!
