Happy Monday, friends!!!
Winter normally sucks in Cleveland. There’s really no beating around the bush. This winter has been absolutely no exception. However, the one and ONLY saving grace about this winter has been the sunshine. I truly cannot remember any winter in recent history that has been as sunny as this one. So yes, it may be -4˚ outside today, and yes there may be inches, if not feet, of snow on the ground. BUT, the sun is shining, the birds are singing (true story — they didn’t get the memo that Winter 2014 is here until July), and it’s a great day to be alive!
Something ridiculous happened over the weekend. Two things, really. One, I finally jumped on the Facebook bandwagon with my blog. You can find my blogs officially posted here: www.facebook.com/runningonhappy. I’m sure I’ll also be posting tips/tricks, inspirational quotes, random stories and photos, etc. Come along and “like” my page to stay in the loop! I’m thinking there may be a giveaway in our near future. Maybe a “100 Like” or “200 Like” celebration of sorts.
The second ridiculous thing that happened over the weekend was that I officially signed up for my first half marathon! I will be running the Cleveland Half Marathon on May 18. I’m so nervous. I was on the fence about it. Truth be told, I wanted to get this 10-miler under my belt before committing to 13.1, but some of my runner friends convinced me to go for it. So here I am, palms perpetually sweating due to nerves, anxiously awaiting not only my 10-miler but now a half marathon as well. I’m really only doing it for the sticker. Come cheer me on!

No Monday is complete without a recipe share! This one is ah-maze-ing. I found this delicious dish (not really a dish, more of a snack) on Gimme Some Oven. Here’s the link. And here’s the recipe:
No-Bake Energy Bites
Ingredients
1 C old fashioned oats (dry)
2/3 C coconut flakes
1/2 C peanut butter
1/2 C ground flaxseed
1/2 C chocolate chips
1/3 C honey
1 tsp vanilla extract
Directions
Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and chill in refrigerator for half an hour. Once chilled, roll balls into whatever size you like. (I’ve done several sizes, but the best ones are probably 1-1 1/2″)
Store in an airtight container and keep refrigerated for up to one week.
Unfortunately I don’t have a photo of mine because frankly, they were so good we ate them all too quickly. I’ve made two batches of these so far and am planning on making another batch this afternoon. This photo is from the Gimme Some Oven page.
These energy balls are great for post workout, quick snack on the go, or as a yummy post dinner treat. Enjoy! 🙂
