Happy Monday, world! How was your weekend? Last week I made this delicious curry dish that I’ve been waiting to share with you until today, and now I finally can! I hope you guys like it as much as we did. The original recipe hails from Better Homes and Gardens. I don’t even know how I ended up on their site but they do have some wonderful recipes. It is billed as a side dish, but I served it as a main dish with black quinoa as a side. It was quite good.
I did alter this recipe quite a bit. Truthfully, I didn’t stick to the measurements. I’m not exactly sure how much that affected the overall flavor, but we loved it. Here’s the original recipe, from Better Homes and Gardens!
Ingredients
- 3 C cauliflower florets (I didn’t measure the cauliflower — just used a whole head!)
- 1 15 oz can garbanzo beans, rinsed and drained (I used boxed garbanzo beans from Whole Foods — I don’t recall the precise measurement but it’s not 15 oz)
- 1 C frozen cut green beans
- 1 C sliced carrot (I used 3 medium sized carrots)
- 1/2 C chopped onion (I used one medium onion)
- 1 14 oz can vegetable broth
- 2 tsp curry powder
- 1 14 oz can light coconut milk
- 1/4 C shredded fresh basil leaves
Directions
In a slower cooker, combine cauliflower, garbanzo beans, green beans, carrot, and onion. Stir in broth and curry powder.
Cover and cook on low for 5-6 hours, or high for 2-3 hours. Stir in coconut milk and basil. Makes 4-6 servings (unless you don’t measure like I did, and you end up with a giant crock-pot full!).
Today was yoga day! Boy did I need it. It felt amazing to stretch my legs and back — calves and hips especially.
You may notice that my hair is STRAIGHT in this picture! Boo-yah! I got my hairs did yesterday by my friend who is a master straightener and hair artiste! It won’t be like this for long but while it is, I get the short-lived pleasure of being able to run my fingers through my hair. If you have curly hair, you know what I’m talking about.
