Happy 4th of July, y’all!!
Today is one of my favorite holidays of the year. Not for the fireworks, not for the cookouts, not for the day off of work for my husband. Today is one of my favorite holidays of the year for the festive waffles.
I’ve posted about our beautiful red, white, and blue waffle creations before. And I’ve also told you the reason we have adopted this tradition of waffle-making is because as a kid, I used to decorate cakes in the north woods of Wisconsin at my summer camp. We’d crank Don McLean’s American Pie, smear frosting on the cakes and ultimately on each other, and have a grand ol’ time.
My kids are still too little to handle the cake decorating which is why we’ve created a slightly healthier twist on the event.
This year instead of the same old recipe, or idea, I’m giving you a legit waffle recipe to make from scratch — and then decorate. This recipe is amazing. It uses whole grain flour instead of white flour, coconut oil instead of vegetable oil, and honey instead of refined sugar. But don’t take my word for it — try it for yourself!
Festive Whole Grain Waffles Americana
Ingredients
for the waffles
- 2 eggs, room temperature
- 2 C whole grain flour
- 1 3/4 C milk, warmed to room temperature
- 1/2 C coconut oil, warmed to room temperature
- 2 1/4 tsp honey
- 4 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp vanilla extract
for the toppings
- strawberries, quartered
- blueberries
- Cool-Whip (or whipped cream, or white frosting)
- red food coloring
- blue food coloring
Directions
Set eggs and milk on the counter to bring to room temperature. Warm the coconut oil in a small saucepan until it liquifies but doesn’t heat and burn.
Beat eggs in a bowl until light and fluffy. Combine dry ingredients in a large, separate bowl. Add wet ingredients to the eggs, and then pour wet ingredients into dry ingredients. Whisk to combine until smooth.
Pour waffle batter on a preheated waffle iron. While the waffles are cooking in the waffle iron, prepare the toppings.
Wash the fruit, slice the strawberries.
Put about a cup (less or more, to taste) of Cool Whip in three separate bowls. To one of the bowls, add a few drops of red food coloring. Mix until completely combined. Add more as necessary to create red topping.
To another bowl of Cool Whip, add blue food coloring and do the same. Add more as necessary.
Top whole grain waffles with whatever you’d like, in any combination you’d like.

I highly suggest turning up Don McLean’s American Pie while all of your 4th of July waffle-making activities are occurring. It creates a fun and festive atmosphere. Trust me.
