Happy Monday, loves! As you know, today is Recipe Monday. I have a delectable recipe to share with you today for Pasta with Roasted Veggies. It’s super easy, and there is basically no “set” way to do it. It requires minimal planning or shopping, and you can basically use whatever fresh veggies you have on hand. I’ve made this recipe a few times. This last go I used zucchini, yellow squash, scallions, radishes, broccoli, cilantro, carrots, and garlic. It was amazing. Top with a light dusting of fresh parmesan and you’re golden.
Pasta with Roasted Veggies
Ingredients
Whatever fresh veggies you have on hand, diced or thin sliced. Here are some ideas:
- 2-3 carrots, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- mushrooms, sliced
- 6-12 cherry tomatoes, quartered
- zucchini, diced
- yellow squash, diced
- 2-3 cloves of garlic, thinly sliced
- 2-3 tbsp fresh chopped cilantro or parsley (optional)
- homemade pasta (preferable)
- 2-3 Tbsp olive oil
- sea salt, fresh ground pepper
Directions
Preheat oven to 400˚F. Dice and slice all of the veggies you’re using. Place them in a large bowl. Pour 2-3 Tbsp of olive oil over, sprinkle with salt and pepper to taste, and toss to coat.
Put the veggies in a 4-5 qt baking dish, smooth them down, and place in a 400˚ F oven for 30-35 minutes, stirring once or twice while roasting.
While the veggies are roasting, make your pasta. If you have access to fresh pasta, use that. It is amazing. We like fresh pasta from Ohio City Pasta. I know not everyone has access to this kind of pasta so if you don’t, the boxed kind is fine, too. Try to go for a linguine or fettucini if you can, but really any type of noodle will do. We’ve even made this with farfalle before!
Once the veggies are done, prepare a pasta bowl with just a touch of olive oil or butter on the bottom. Add pasta, top with veggies, sprinkle on some parmesan, and voila! — delicious gourmet dish just for you.

I had a nice weekend of running, if you must know. I had the pleasure of running with two friends. Saturday morning I ran with one friend in a nearby neighborhood with grand homes. The park we ran next to was very beautiful. She’s a fast one, so I definitely got a hefty workout in, even for a 3-miler. Sunday was fun, too. I went to a local park and was planning on running with one friend and a new group of people, but it was a little rainy (very light, almost misty) and I’m guessing the group never came, because we never saw them. We waited around for a little while, and did meet a very nice young man. He is training for a marathon in PA and averages a 6:30 mile. Geesh! There was no way we were running with him. So my friend and I ran a very nice and relaxed 6 miles. We had some great conversation as well. I’m starting to really value the time I have with my friends on the road. It has been therapeutic, for sure. Listening to loud techno is awesome and I love that, too. But there’s something about the camaraderie of the road that is very comforting.
