As you are probably aware, I had a fairly busy weekend. Thankfully one of my favorite friends, Noemi, created yet another amazing recipe to share. I’m just glad it coincided with my race because it was one less thing I needed to worry about for today. Plus it looks amazing. Here’s Noemi!
Vegan Summer Salad
Ingredients
for the Salad
- 1 1/2 cup cooked quinoa
- 1 can black beans, rinsed and drained
- 1 can black eyed peas, rinsed and drained
- 1 1/2 cup sliced cherry or grape tomatoes
- 1 cup fresh cooked corn kernels OR 1 can corn, drained
- 1 whole avocado, chopped
- 1/4 cup chopped cilantro (optional)
for the Dressing
- 1/4 cup finely chopped red onion
- 1 1/2 Tbs mustard (whole grain mustard is best!)
- 3 Tbs red wine vinegar
- 1 Tbs minced garlic
- 1/4 tsp red pepper flakes
- 4 Tbs olive oil
- Salt to taste
Directions
Make the dressing in a small bowl (I usually use a cereal bowl). First add the red onion, then all the other ingredients. Let this sit together while you chop the salad ingredients. This will mellow some of the bite of the red onion.
Assemble all the salad ingredients in a large bowl and toss it all together with the dressing. This is such a tasty and versatile salad! You can put it in a wrap with some spinach, top some hefty crackers with it, or eat it just as a side! It is delicious and barely lasts two days in our house of two adults and one toddler.
Of course, you can doctor this recipe if you’d like! Switch out the quinoa for orzo pasta! Switch out the black eyed peas for even more black beans! I love the cilantro, but if you don’t, you can substitute in fresh chopped basil, which still has a fresh summery taste.
