Goooooood morning, world! If you’ve been following along on my Facebook page, you know that this past weekend was crazy for me. So busy traveling to/from Midway, KY, running a half marathon, catching up (and meeting new) friends. It’s been a whirlwind, and superbly amazing. I can’t wait to tell you all about it. If you haven’t followed along, here’s a sneak peek.
In the meantime, I have a delicious recipe for you today. Since it’s getting cool and very fall-like up in my area, I figure it’s time to share all the cool weather favorites. It’s for Apple and Pear Baked Oatmeal. If you don’t like apples or pears, feel free to substitute for a fruit you prefer. Some suggestions include banana, peach, strawberries, or blueberries. I got the original recipe from the Oh She Glows cookbook, but have adjusted it a little to my family’s taste preferences.

Apple and Pear Baked Oatmeal
Ingredients
- 2 1/4 C rolled oats
- 2 Tbsp brown sugar
- 2 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp ginger
- 1/2 tsp sea salt
- 1/4 tsp nutmeg
- 2 C milk
- 1/2 C applesauce
- 1/4 C maple syrup
- 2 tsp vanilla
- 2 apples, peeled and diced
- 1 pear, peeled and diced
Directions
Preheat oven to 375˚F. Lightly grease a 2-quart baking dish.
Combine oats, sugar, cinnamon, baking powder, ginger, salt, and nutmeg. Mix well.
In a separate bowl, stir together milk, applesauce, syrup, and vanilla. Pour the syrup mixture over the oats and stir until combined. Fold in the apples and pear.
Pour the mixture in the baking dish and smooth the top. Bake for 35-45 minutes or until bubbly around the sides. Cool for 5-10 minutes.
