The Best Meatless Meatballs

One of my favorite meals at restaurants as a kid was spaghetti-and-meatballs. We’re not Italian, so my mom didn’t make delicious, authentic Italian meatballs. But they were always something I loved. Lucky for me I had a bunch of Italian friends so I was never far from good carb-and-meat-laden eats!

But I don’t eat much meat anymore, and lately I’ve found myself wishing for a big plate of spaghetti-and-meatballs once again. I asked myself, “why sacrifice a delicious dinner just because we don’t care for the meat?” To satisfy my craving and add a little “meat” to our meal, I pieced together an amazing recipe for meatless meatballs that rival the flavor of any true meatball. I used several recipes for inspiration and what I’ve come up with, in my very humble opinion, combines the best of the best. Check it out:

The Best Meatless Meatballs

Ingredients

  • 3-4 C broccoli florets, steamed and finely chopped
  • 1 C cashews
  • 1/4 C Parmesan cheese, grated
  • 1/4 C basil, finely chopped
  • 1/4 C parsley, finely chopped
  • 4 cloves garlic, minced
  • 1 tsp fine-grain sea salt
  • 1/4 tsp freshly ground black pepper
  • 1 Tbsp ground flaxseed
  • 3 Tbsp water

Directions

Preheat oven to 350˚F. Line a large baking sheet with parchment paper. Steam the broccoli if you haven’t already done so. While broccoli is cooling, in a food processor, process the cashews until ground but not a powder.

Whisk the flaxseed and water. Set aside.

When cool enough to handle, chop the broccoli, or pulse in the food processor.

Combine cashews and broccoli in a large bowl. Add cheese, herbs and spices and mix well to combine. Add the flaxseed and water mixture, and mix thoroughly so all ingredients bind.

Shape the mixture into 1/2″ balls. Press firmly to ensure the balls stay together. Place them on the parchment lined baking sheet and baked for 30 minutes, or until golden brown.
