Happy Monday! It’s officially the last Monday of 2015!! I seriously can’t believe how quickly this year has gone by. Is it because I was busy running, running, running? Or perhaps I was distracted by all the food I was busy shoving in my face. Or maybe the little people running around like maniacs inside and outside my house [all. year. long.]. Nevertheless, here we are — another year gone by, and a new one to look forward to.
Turns out I was quite busy this year. I have a lot to reflect on and be thankful for. I’ll be taking a trip down memory lane throughout the week to close out 2015, and I hope you’ll join me and share some of your favorite (and even some not-so-favorite) memories, too.
To kick things off, I’m taking a look back on a few of my most well-liked recipes of 2015. They’re all tasty in their unique kind of way. Get those recipe cards and ingredients ready because you don’t want to miss these. Don’t say I didn’t warn ya!

30-Minute Chili from the Forks Over Knives cookbook is a top recipe from 2015! Back in January, I reviewed the Forks Over Knives cookbook and I was thrilled with all the amazing recipes included. The 30-Minute Chili has been a go-to for our family and it’s just perfect for cold, winter days. Check out the full recipe here.
The Thai Peanut Noodle Bowl garnered from the Oh She Glows cookbook was another fan-favorite. — and for good reason, too. The simplicity of this noodle bowl plus the nutritional content makes it a great meal for anyone with an active lifestyle. It’s so tasty. You can find the full recipe here.
My Blueberry Marathon Bars were a huge hit this year. Throughout marathon training, I experimented with a whole bunch of different fueling options. I’m not one for gels, so I needed something that tasted great and packed a nutritional punch. These bars were truly ah-mazing on some of my coldest runs to date. They were filling and had enough sweetness to fuel me on for 17+ miles. Don’t leave home without them!
