TGIF, my friends! Am I right?? I don’t know HOW but it seemed like I was moving non-stop this week. I’m glad it’s time for a breather.
Today’s topic for the Friday Five 2.0 is all about food!! Which just so happens to be one of my favorite topics. I love to make it, I love to eat it, I love how it makes my body move and feel. Food is amazing. I love everything about it.
My eating habits have changed dramatically over the last seven or so years. So much so that I’d like to share with you how! Let’s just say I eat Brussels sprouts now, okay?
Healthy Foods You Should Eat!
1. Smoothies
If you had asked me seven years ago if I wanted a smoothie after a run, I would have turned my nose up and said, “no thanks.” I was a chocolate milk kind of girl. Simple and delicious. But now I know better. I know my body needs more nutrients than chocolate milk can supply after a hard workout, and I’ve diversified my tastes over the years as well. Now you’ll even find me adding Great Lakes Gelatin collagen hydrolysate to my post-workout smoothies which is definitely not something I would have done before! (I can’t wait to tell you more about my experience with collagen. Look for a post coming soon!)
2. Chana masala
I don’t think I even knew what chana masala was seven years ago. I ate plenty of Indian food but never made it at home. But when I discovered chana masala and realized how easy it was to make, it was like I discovered gold. Chana masala is filling, delicious, and nutritious!
3. Veggie burgers
Veggie burgers have become a bit of a staple in my household. They make for an incredibly easy weeknight dinner since you can make a big batch at once and freeze them individually for later enjoyment. A few of my favorite recipes:

4. Sweet potato everything
I didn’t grow up eating sweet potatoes. For me, they were a Thanksgiving-only food. But in the last several years I’ve found myself not only enjoying, but also craving, sweet potato dishes. Some of the less conventional sweet potato dishes I’ve made include veggie quiche with a sweet potato crust and sweet potato enchiladas. Then, of course, there are sweet potato fries and slow cooker recipes with sweet potatoes and things like that which are delicious, too. The takeaway here? Sweet potatoes are amazing and versatile tubers.
5. Farm fresh veggies
This might sound strange, but before we joined our CSA I had never had things like celeriac root, fennel, and kohlrabi. Joining a CSA really opened my eyes, and my taste buds, to all the seasonal vegetables available in my area. It made cooking an adventure and I really enjoyed it. I’m not sure if we’ll be participating again this summer but after several years in the CSA now I know what types of vegetables to look for at the farmers market.
