Easy Homemade Vegetable Soup

There’s no better way to stay warm than with a hot beverage or steaming bowl of soup. And what better way to enjoy soup than to enjoy homemade soup? Mmmm…

This soup — my homemade vegetable soup — is the easiest soup recipe you’ll ever make. It’s gluten-free, vegan, and is incredibly flavorful. It really hits the spot on a cold day. Warm up with a bowl of homemade vegetable soup and some crackers for lunch, or serve with a baguette and salad for dinner. Either way, your tummy will be happy and your body will be warm. Enjoy!

Easy Homemade Vegetable Soup

Ingredients
  • 4 C vegetable broth
  • 1 Tbsp olive oil
  • 1 small onion, small diced
  • 3 cloves garlic, rough chopped
  • 1/2 C shredded carrots
  • 2 stalks celery, thin sliced
  • 1 Tbsp fresh dill
  • 1 tsp salt
  • fresh ground pepper, to taste
Directions

Pour vegetable broth in a large saucepan and heat over medium-high heat. Add carrots and celery and bring to a low boil. Simmer.

Meanwhile, heat oil in a small skillet over medium-high heat. Add onions and cook until translucent, about five minutes. Add garlic and saute for 1-2 minutes.

Stir onions, garlic, dill, salt and pepper in to soup. Bring back to a boil and simmer 10-15 minutes or until vegetables are fork tender (or tender to taste). Serve and enjoy!

I’m serious when I say this is one of the easiest — and most flavorful — vegetable soups. I’m not just tooting my own horn. I mean, maybe a little bit, but trust me — it’s great. I’m secretly waiting for a good time to make it again so I can eat more soup!

Don’t forget (I mentioned this on Friday) — I’m in the midst of categorizing my recipes so if you can’t find something you’re looking for, that’s why. I’m almost done organizing! Phew. 🙂

I like really thick soup, almost stew or chili. I used to hate it, but I love split pea soup! I’m also not opposed to a good sweet potato coconut curry soup. Love that on a cold day!

    I don’t think I’ve ever actually had split pea soup. I wonder if I should try it now that I’m a grown-up. Haha. I love sweet potato chili. I bet that soup would be good! Thanks for these ideas. 🙂

I am addicted to the Whole Foods soup mix with veggies and spices all ready for the pot. You just broth and a protein and there you go!

    I haven’t had beef stew in YEARS. And it was one of my faves. I have an amazing beef stew recipe. I wonder if it would destroy my stomach if I made it… hmmmm… might be time to try!

Ok, is it weird (or am I just too predictable?)…I was gonna say my favorite soup is white chicken chili except I actually said that a year ago when this was posted before LOL Well, I still have the same answer 😉 I had forgotten about your recipe, though. Dill is a unique seasoning (at least for me), I bet that gives this soup an interesting zing 😉

I love how simple this recipe is, and the addition of dill here – I never usually add that to soup but I bet it adds such nice depth of flavor. My fav soup is probably broccoli cheddar – it’s just soooo tasty.

I love soup and frequently create one one a cold day. I generally throw a lot of things in the pot, add some seasonings and vegetable broth and cross my fingers! ? And It usually tastes really good!
