Try This Easy Peppermint Mocha

I spent the entire day on Sunday baking cookies. Oreo peppermint crunch cookies, chocolate peppermint truffles, peppermint chocolate covered pretzels… and I still have three more batches of cookies to make, which will likely happen on Wednesday. When all is said and done, I will have made nine different types of holiday treats. That’s a lot of cookies.

Luckily not all of those cookies are staying in my home for too long, otherwise I’d be in a lot of trouble. So far we’ve gifted several boxes to teachers, one to the mailman, and I’m participating in a cookie exchange on Tuesday. Then on Christmas day we’ll be taking a cookie tray to our friends at the police and fire stations. It’s tradition. 🙂

Anyway — back to my cookie baking extravaganza. You might have noticed a trend in Sunday’s baking activities. All of my recipes involved peppermint. I found myself longing desperate for a cup of joe while baking so many comforting confections. I thought I’d get myself in the spirit and create something fabulous — and easy! — to stay focused on the task at hand. With all the peppermint and chocolate floating around my kitchen, I opted for a peppermint mocha. Since “easy” was the keyword, I opted to use a hot cocoa mix instead of milk and unsweetened cocoa powder (hey, one less measuring spoon to wash — don’t judge!). The finished product is the same great mocha taste with one less thing to fuss over.

This is hands down the easiest peppermint mocha recipe you’ll ever come across. You truly don’t need anything fancy on hand to make it except for peppermint extract and hot chocolate. Oh, and coffee, too. If you are a coffee enthusuiast, you’ll probably know all about Coffee Grinding and can go ahead and make it with an espresso, if you are a coffee novice though, instant is fine!

Create, sip, snuggle up, and enjoy.

Easy Peppermint Mocha

Ingredients
  • 6 oz Starbucks Christmas blend coffee, brewed
  • 2 tsp hot cocoa mix
  • 1-2 drops peppermint extract
Topping
  • whipped cream to taste, optional
  • crushed candy canes to taste, optional
Directions

Pour hot coffee into a large mug. Add hot cocoa mix and stir to dissolve completely. Add 1-2 drops of peppermint extract. Top with whipped cream and peppermint candy canes.
