Cheesy Salsa Nachos and Root Beer Floats

I’m finally admitting to myself that yes, fall is indeed here. And although I’m lamenting the loss of abundant sunshine and warm weather, I’m (not so) secretly happy that chili, football, and apple picking season is upon us.

My husband loves everything football which by default means my kids and I do, too. What I love more than actually watching football is eating all the football-watching food. You know what I’m talking about — the chili (yes, I apparently have an infatuation with chili), the nachos, the dips and drinks.

This past Sunday in my house was full of football and snacks. Cheesy nachos and root beer floats, to be precise. We made excellent root beer floats. The trick is to layer the ice cream. Check it out:

Cheesy Salsa Nachos and Root Beer Floats

For the nachos:

Ingredients
  • half of a bag of nacho chips
  • 1/4 C salsa
  • 1 C shredded cheddar cheese
Directions

In a large bowl or plate, layer the nachos. Dabble the salsa around the nachos, getting into the layers as much as possible. On top of the salsa, spread the cheese. Place the bowl or plate in the microwave. Microwave on 50% power for 1 minute. Check for doneness. If necessary, continue cooking for 30-second increments, checking between each cycle to make sure the cheese is melted evenly.

For the root beer floats:

Ingredients
  • vanilla ice cream (vanilla bean or French vanilla both work well)
  • root beer
Directions

In a tall glass, scoop one large scoop of ice cream into the bottom. Slowly pour root beer on top of the ice cream, taking care not to overflow the glass. Place another scoop of ice cream on top of the foam. If you have enough room in the glass, continue layering ice cream and root beer, alternating between the two. Serve with a fun straw and enjoy!
