Meatless Monday: Roasted Veggie Gnocchi

Oh my GAWD what a freakin’ weekend!!! You know I keep things mellow around here (for the most part), but I want to shout nothing but expletives from the rooftop — and laptop. I spent the entire weekend — no joke — creating a beautiful new site, changing hosts, transferring domains — and it was a complete and utter disaster! I’m thanking my lucky stars I still have a blog to come to because for a minute I thought I was completely SOL. My email is down — I can send but can’t receive — so if you’ve been trying to send me emails and you’re getting error messages, that’s why. But I should be fixed and back up and running soon.
Phew. End rant.
Despite all the weekend’s chaos, I still have an amazing recipe to share with you on this glorious Meatless Monday. Link up with Annmarie and me! Linkup details are at the end of the post.
I hope you enjoy this tasty dish. It’s adapted from the Forest Feast cookbook. The original recipe calls for eggplant but since my family’s allergic to eggplant, I swapped it with sweet potato. The final result was amazing. Can you tell I’m kinda, sorta in love with Erin’s recipes?
Roasted Veggie Gnocchi
adapted from The Forest Feast
Ingredients

  • 4 Tbsp olive oil, divided use
  • 1 large onion, cubed
  • 1 large sweet potato, peeled and cubed in 1″ pieces
  • 1 orange bell pepper, cubed
  • 1 red bell pepper, cubed
  • 3 cloves garlic, minced
  • 1/2 tsp fine grain sea salt
  • 16 oz gnocchi
  • 1/2 tsp garlic powder
  • 1/2 C grated Parmesan
  • salt and pepper, to taste

Directions
Preheat oven to 425˚F. Combine cubed veggies with garlic, 1 Tbsp olive oil and 1/2 tsp sea salt. Roast in a 9×13 glass baking dish for 20-25 minutes, or until fork tender.
Cook gnocchi according to package directions (usually 3 minutes or so). 
When gnocchi and veggies are done, combine in a large bowl with garlic powder, Parmesan, remaining olive oil, and salt and pepper to taste. Toss and serve immediately.
