Meatless Monday: Replenishing Kiwi Strawberry Smoothie

Happy Monday! To say I’m loving my new smoothie-making machine would be a complete understatement. Since purchasing this amazing small kitchen appliance, I’ve gone from never drinking a smoothie to making a smoothie every day. It’s delicious!
My latest concoction is quite tasty. Kiwi, frozen strawberries, and a touch of mango make this tropical treat accessible even in the coldest of winter months. It’s flavorful and full of vitamins and minerals. For a post-workout added flavor and electrolyte boost, consider using half a packet of mango flavor SOS Hydration drink mix with 4 oz of water in place of the mango juice.

Replenishing Kiwi Strawberry Smoothie
makes 1 individual serving
Ingredients

  • 1/2 banana
  • 1 kiwi, peeled and quartered
  • 5 whole frozen strawberries
  • 1/2 C spinach
  • 2 Tbsp ground flaxseed
  • 1/4 C plain yogurt
  • 1 Tbsp mango juice (added electrolyte boost: sub with half a packet of mango flavor SOS Hydration drink mix and 4 oz of water)
  • 1 tsp honey

Directions
Combine all ingredients in blender cup. Pulse until smooth. Enjoy!
