Meatless Monday: Winter Wellness Salad

Looking for a simple, nutrient dense option for winter meals? This salad is packed with flavor, essential vitamins and minerals to keep you healthy and happy during the cold weather months, and it’s tasty and filling all on its own or as an accompaniment to a hot entree.
For this salad, I gathered together veggies and fruits that are in season and most of the time, available locally. You’ll see tomatoes, clementine segments, and kale at the heart of this dish. Clementines are perfect since they add some vitamin C, plus a unique flavor and texture.

 

Feel free to play around with additional garnishments, but at the core, this is a great winter time salad. It’s one of my go-to lunch items since it’s super quick to make and really filling. Add half a sandwich or cup of soup and voila! — the perfect wintertime lunch.

Winter Wellness Salad

 
Ingredients

 

  • 1 large stalk green leafy kale, torn into bite size pieces
  • 1/4 C shredded carrots
  • 6 slices of zucchini, 1/4″ thick and quartered
  • 1 clementine, peeled and segmented
  • 6-8 cherry tomatoes
  • 2 Tbsp mandarin ginger dressing (I used Briannas)

 

Directions
Place all the veggies in a large bowl, layer as you please. Dress with your favorite dressing — the combination of ginger and mandarin really bring out the flavors of the ingredients — and enjoy!
