Recipe Monday: Vegan Nacho Cheese Dip

My husband is a huge football fan. He waits all year long for football season to start. I hem and haw and roll my eyes, but let’s face it — I have a penchant for game day food, so I’m not really all that broken up when the beer, nacho cheese and tortilla chips, popcorn, and pretzels make an appearance. I perform better as a runner when I’m not eating meat, and since my family has a history of Crohn’s and colitis, it’s better for me when I steer clear of dairy as well. Since I love my Meatless Monday, I’ve decided to take the #MeatlessMondayNight challenge. This football season, I’m challenging myself (and subsequently my husband) to make better choices when it comes to game day nosh. This weekend I challenged myself to make a dairy-free, vegan nacho cheese dip and my, oh my, did it come out delicious. I guarantee you, the bowl will be all but licked-clean. Try it for the next game and you’ll be surprised at how amazing dairy-free “cheese” dip can be! (Or maybe it will be licked clean? It’s really that good.)

Vegan Nacho Cheese Dip

Ingredients

  • 1 potato, peeled and cubed
  • 2 carrots, peeled and diced
  • 1 C Silk cashew milk
  • 1-2 tsp fine-grain sea salt
  • 1/2 C nutritional yeast
  • 1/2 tsp chili powder
  • 1/4 tsp garlic powder


Directions
In a medium saucepan, cover the potato and carrots until covered. Boil until vegetables are fork tender, about 8-10 minutes. Drain and place in a blender or food processor. (You can also use an immersion blender, it will just take a little longer to achieve the desired consistency.)
Combine the remaining ingredients in the food processor and process until the dip is smooth and creamy. Serve warm with your favorite local tortilla chips and enjoy! Can be stored in the refrigerator for one week, or make a larger batch and freeze for up to a month.
