Recipe Monday Redux: Banana Boats

Happy Labor Day, friends! Hope everyone has been having a fabulous weekend — enjoying cookouts, airshows, last days at the pool — however you’ve been relaxing and taking some time off from the grind!
We were busy this weekend. On Saturday we took advantage of the huge Labor Day sales and bought a new mattress! Yay for being so old that buying a full size mattress is exciting… Can I get a “what, what?”
I’m really excited about our new mattress, though. We don’t get it for another week but it’s hotel quality. Not like, Super 8 quality. I’m talkin’ like, Ritz Carlton quality. It’s firm yet cushy… Can’t. Wait. The kids were marginally well behaved, so we rewarded them with ice cream. Of course.
On Sunday we went to the airshow. It was hot. And awesome. I’m pretty sure my husband and I think we’re taking the kids to “do something fun,” when really it’s just us who wants to see the F/A-18 Super Hornet. Because let’s face it:

The kids had fun but only because they got inflatable replicas of the Thunderbirds. Boo cried because he was so hot and uncomfortable, and Little Bee was very confused by the earplug situation.

After the airshow, we went out to dinner and had a lovely meal together. And of course we rewarded ourselves with more ice cream. Because that’s what we do here, folks. 

I have a point in telling you about all this. My point is, we are mildly obsessed with dessert in our family (okay fine, that might just be me. But as the matriarch of the family, I make sure we get our fair share of sweets!). Couple dessert with having a very busy weekend, and I unfortunately do not have a brand new recipe to share with you. I have one for next week, however, so stay tuned for that. I didn’t want to leave you hangin’ today, though. What I have for your today is perfect for the end of summer grilling season! Enter, banana boats… Half healthy, half not, they’re a sweet treat you can enjoy with your family and friends, and feel somewhat less guilty about all the chocolate. Because — bananas! They’re a fruit, right?

Banana Boats!
Ingredients/Supplies
  • Charcoal or wood for the fire
  • Fire ring with a grate, OR you can put these on the grill
  • Tinfoil
  • Bananas (as many as you’d like! Or a general rule of thumb is one per person)
  • Chocolate Chips
  • Marshmallows (mini marshmallows are easiest to use, but you can use the big ones too)
Directions

Lay out a sheet of tinfoil, making sure the foil will be long enough to have “handles” at the ends once the banana is inside. 
Make a slit in the banana lengthwise, leaving the peel intact, except the part that you slit.  Place the banana in the center of the foil. 
Inside the banana, place marshmallows and chocolate chips. Once the banana is full to your liking, you will wrap the banana in the foil. Don’t wrap too tightly. You want to make sure you don’t squish the gooey goodness on the inside! Make sure you created some handles so you can easily move your banana boat around on the fire for optimal roasting and melting.
Place the wrapped banana on the grill or fire grate. Leave for 5-10 minutes, or until the inside is melted and gooey. Carefully unwrap the foil, grab a fork, and dig in!
