Today I have a fabulous recipe for beet burgers. I know, I know. It sounds weird. But it is to-die-for. This recipe uses red beets, onion, garlic, and feta cheese. The sweetness of the beets and the saltiness of the feta twist into a perfect combination of flavors. It’s almost indescribable.
About a month or so ago, I stumbled upon this recipe on Food52. We’ve received beets several times in our CSA bag this season. Typically, I make roasted beets, but I wanted to try something new. I’m so glad I did! Check out the recipe below.
Beet and Feta Burgers
Makes 6 to 8 burgers

Ingredients
- 3 C grated beets (about 4 to 5 beets)
- 1 onion
- 2 garlic cloves
- 2 Tbsp olive oil
- 2 eggs, lightly beaten
- 1 ½ C rolled oats
- 6 oz crumbled feta cheese
- coconut oil (for frying)
Directions
Peel the beets, onion, and garlic clove. Using a food processor with grater attached, grate the vegetables. Place the grated veggies in a large bowl.
Add olive oil, eggs, and rolled oats and mix everything well.
Add crumbled feta and stir to combine. Using cheesecloth or a strainer, gently squeeze the excess liquid from the beet mixture. Set aside for about 30 minutes so the oats can soak up any remaining liquid and the mixture sets.

If the mixture is too loose to form into a patty after setting, add some more oats.
Form 6 to 8 patties with your hands. Heat coconut oil on a square griddle over medium heat, and lightly fry the patties until golden brown on each side. Serve on a tasty challah bun with toppings of your choice.

Note about toppings: You can easily add whatever burger fixin’s you prefer. I find, and my family agrees, that this burger is so tasty on it’s own that it really doesn’t need any additional “dressing up.”
P.S. This is a really easy recipe to make ahead of time for when you’re having company or in a pinch for dinner on a busy night. Just flash freeze your burgers and save ’em for later!
