I have great news! It’s finally summer in the CLE! Holla! It has finally reached acceptable summer temperatures. As I mentioned previously, we were supposed to go camping this weekend and canceled our trip on account of rain which never happened… I’m not bitter because instead of camping it was hot as heck so we hit the pool! First time all summer.
So you know what else happens when it’s summer, right? (Besides the pool and camping, of course.) Picnic-style salads! I’m linking up with the Fit Foodie Mama and Powered by BLING today for Meatless Monday. Join us! But please make sure you follow the link-up rules, because link-ups are only fun when everyone participates. 🙂
I honestly can’t believe I haven’t shared this delicious recipe with you yet because it’s super easy, and really yummy. It’s a cool salad which is perfect for a hot summer’s day. Pack it up for a picnic or a BBQ and you won’t be taking home leftovers. Enter Watermelon, Cucumber and Feta Salad.
