Happy Monday! How was everyone’s 4th of July weekend? Mine was good! I ran with the usual suspects on Saturday morning, and then went to hang out with some friends on Saturday evening. Sunday was spent cleaning and organizing, and then picking up my dad from the airport. Good stuff.
Two weeks ago we finally got garlic scapes in our CSA bag. I’ve been waiting three years for garlic scapes so when it finally happened, you can imagine my excitement. When I found out we would be getting scapes, I planned on making garlic scape pesto from a recipe I already had. Unfortunately when we actually received said scapes, there were far few than the recipe called for. As such, I improvised.
What came of my improvisation was nothing short of perfection. Not to toot my own horn (okay, maybe a little tooting), but my pesto was amazing! Try it and see for yourself. Mmmm…
(Want to know something funny? I don’t even like pesto. Go figure!)
