Recipe Monday: Hummus Sandwich

Happy Monday! And Happy February! You know what February means? We’re one month closer to spring. Hallelujah!

I’m linking up with Cassandra from Powered by BLING and Annmarie from The Fit Foodie Mama to bring you some amazing meatless dishes to feed your belly on this wonderful Meatless Monday.

Today’s recipe isn’t really a recipe. More of a compilation, if you will. And it’s inspired by Annmarie because she posted her favorite sandwich not too long ago! It’s easy, it’s hearty, and it will leave you satisfied and full until your next snack or meal. In my family we’ve lovingly dubbed it the Hummus Sandwich as it’s base is hummus. But you can call it whatever you’d like — veggie sandwich, happy sandwich, kitchen sink sandwich — whatever does it for you.

The best part about this sandwich is that my kids totally love it. My son requests it at least once a week for lunch at school.

There’s no “right” or “wrong” way to go about making this sandwich. Below is a sample recipe that I use often but only because these are the items I almost always have on-hand in my fridge.

 

 

Hummus Sandwich

Ingredients

  • 2 pieces of bread (my fave is the Early Bird Seed from Whole Foods)
  • 1 Tbsp garlic hummus
  • 1 leaf green kale, torn into pieces (or leafy green of your choice)
  • 1/4″ thick slice of tomato
  • 3-4 avocado slices
  • 1/4″ thick slice of red onion
  • slices of cucumber (enough to cover the bread on one side)
  • 1 Tbsp your choice of salad dressing, or a light coating of yellow mustard
  • sprinkle of Manitoba Harvest Hemp Hearts

 

Directions

Spread the hummus on one piece of bread. Layer in the following order (and only because after making what seems like hundreds of these sandwiches, this is the least likely way to tip your sandwich over!):

  • cucumber
  • avocado
  • tomato
  • leafy greens
  • onion
  • dressing

 

 

 

 

 

 Put the second slice of bread on top. Hold it together carefully, take a bit, and love it!

Like I said, feel free to add whatever you’ve got. I’ve made this sandwich with swiss chard, kidney beans, sprouts, leftover falafel. Pretty much whatever your heart desires. Get creative!
