Recipe Monday: Apple Pie Oatmeal

Happy Labor Day, friends! Got any plans for today? I was planning on running this morning but opted for a quick yoga session since we are taking kids to the airshow later. Should be fun! Photos will follow. 🙂

Today’s recipe is great. It’s tasty, nutritious, and quite filling. This oatmeal recipe hails from the Oh She Glows cookbook. It’s delightful. Feel free to experiment with different fruits and toppings. The first time I made this I followed the recipe precisely. The second time I made it I changed the fruits. The third time I made it I just kinda winged it. And you know what? It was yummy all three times. 🙂 Enjoy!

Apple Pie Oatmeal
Ingredients
  • 1/3 C rolled oats
  • 1 medium apple, peeled and diced
  • 1 Tbsp chia seeds
  • 1/2 C applesauce
  • 1 C milk
  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • pinch of salt
  • 1/2 tsp vanilla extract
  • 1 Tbsp maple syrup
  • 1 Tbsp chopped walnuts (optional)
  • 1 Tbsp hemp seeds (optional)
  • pinch of shredded coconut (optional)
Directions
In a medium saucepan over medium heat, combine oats, apple, chia seeds, applesauce, milk, cinnamon, ginger, and salt. Whisk well to combine. Bring the mixture to a low boil and simmer for 8-10 minutes, stirring frequently.
When the mixture has thickened and liquid has been absorbed, remove the pan from the heat and stir in vanilla and syrup.
Pour oatmeal into a bowl and top with optional toppings to taste.
Eat and enjoy!
