Recipe Monday: Summer Kale Salad

Now that the temperatures are rising (wait, are they? because I’m pretty sure it’s still cold here in CLE), who doesn’t love a nice crunchy salad? Today’s recipe is a crowd pleaser. Even if the crowd is just your family. Salad. Sounds boring, I know. But when the salad is chock full of superfoods like kale, quinoa, and blueberries, you’ve got yourself a surefire winner on all fronts.

Summer Kale Salad
Ingredients

 

  • 8 cups kale – middle stems removed, chopped
  • 1 cup cooked quinoa, cooled
  • 1 cup blueberries
  • ½ cup pomegranate seeds
  • ¼ cup chopped walnuts

    2 carrots chopped or shredded

 

Dressing

 

Ingredients

 

  • ¼ cup balsamic vinegar
  • 1 tablespoon Bragg’s liquid aminos
  • 1½ tablespoon Dijon mustard
  • 1½ tablespoon raw honey
  • 3 tablespoons nonfat Greek yogurt
  • ½ tablespoon extra-virgin olive

 

Directions

Combining all dressing ingredients into a medium bowl and whisk thoroughly. (If you have a jar with a lid you can combine in the jar and shake it to combine.)

Coat the chopped kale with 2 tablespoons of dressing and mix. Set aside.

Add the quinoa to the kale along with the blueberries, pomegranate seeds, carrots and walnuts. Toss ingredients together using more dressing if desired. For a protein punch, top with tempeh and crumbled goat cheese and serve.

How was your weekend? Next weekend is Memorial Day! Any fun plans? We are going to a local fair, having a blow out yard sale, I’m running a 4 miler, and then we are going to our annual neighborhood parade! Should be intense… 🙂
