Recipe Guest Post: Overnight Oats!

May 27, 2014
Good morning, sunshines! Hope y’all had an amazing holiday weekend. We were busy, busy, busy at my house! So much time, such little to do! Strike that. Reverse it.
Today’s recipe comes from Kimberly at Chasing Kids and Dreams. She’s a pretty busy lady, and is sharing an easy oat recipe! I can’t wait to try it myself. Yum!!!
Here she is… 🙂
Mornings in our house are so hectic during the week. I usually start off my morning with shake or toast with almond butter but there are times that I want to spice it up without a lot of effort. I was so excited when I found this overnight recipe for breakfast oats. Seriously…you can literally prep 7 of these Sunday night and enjoy them every morning for the week ahead.
There is NO cooking, it’s full of great hardy ingredients and it’s portable!!

Ingredients
  • Mason jar with lid
  • 1/4 cup quick oats
  • 1/2 cup unsweetened almond milk (or skim, soy)
  • 1/4 medium banana, sliced (freeze the rest for smoothies!)
  • 1/2 tbsp chia seeds
  • 1/2 cup blueberries
  • 4-5 drops NuNaturals liquid vanilla stevia (or your favorite sweetener)
  • pinch cinnamon

Directions

Place all the ingredients in a jar.
Cover, shake and refrigerate overnight.
Add your favorite crunchy toppings such as nuts, granola, ground flax seed etc.
Enjoy for anytime the next day!
