Recipe Monday: Swiss Chard Tacos!

It’s RECIPE MONDAY!!! AND it’s St. Patty’s Day! w00t! In honor of St. Patty’s Day, I am posting one of my favoritist recipes that I’m making tonight. And guess what, it’s GREEN! W00t again!
Unfortunately I have but one photo to share, and it really doesn’t do this recipe justice. It’s delicious — a family favorite. There are rarely any leftovers. The only area of contention is when Boo gets upset if his tortilla cracks! The little things…

Swiss Chard Tacos

Ingredients

  • 10 corn tortillas
  • 1/2 tsp salt
  • 6 C loosely packed Swiss chard, sliced
  • 1 Tbsp olive oil
  • 1 medium white onion, sliced 1/4″ thick
  • 4 garlic cloves, finely chopped
  • 1/4 C Parmesan cheese
  • 1/4 C salsa

Directions

Warm the tortillas by loosely wrapping with damp paper towels and microwaving for 30 seconds.
Bring 3 quarts salted water to a boil in a large pot. Add chard and cook until barely tender, about 1 to 2 minutes. Drain in a colander and spread the greens out on a large plate to cool. 
While chard is cooling, heat oil in a large skillet over medium-high heat. Add sliced onion and cook, stirring frequently, about 10 minutes. Meanwhile, transfer the Swiss chard to a cutting board and roughly chop. Add the garlic to the onions and stir for one minute. Add the greens and stir for one minute more.
Place the filling into a bowl, sprinkle with cheese. Scoop the filling into a tortilla and add salsa.
